Production
Sodium benzoate is produced by interaction of benzoic acid with sodium hydroxide solution.
Application
Sodium benzoate, food additive (E211), is referred to a preservative group. It has a strong inhibiting effect on yeast and fungi including those aflatoxin forming, inhibits enzymatic activity in microbial cells responsible for redox reaction as well as enzymes splitting fats and starch.
