Sodium bicarbonate (bicarbonate of soda, sodium hydrocarbonate) NaHCO3 (other names: baking soda, edible soda) is acid sodium salt of carbonic acid as a fine white powder.
Sodium bicarbonate enters into a reaction with acids forming salt and carbonic acid that immediately disintegrates into carbon dioxide and water:
NaHCO3 + HCl → NaCl + H2CO3
H2CO3 → H2O + CO2↑
In cooking, the following reaction with acetic acid followed by forming sodium acetate occurs: NaHCO3 + CH3COOH → CH3COONa + H2O + CO2↑
Application of sodium bicarbonate
Sodium bicarbonate (hydrocarbonate of sodium) is used as follows:
· in chemical industry, for production of dyers, foamed plastics and other organic products, fluoride reagents, household chemicals, fillers for fire extinguishers, for separation of carbon dioxide, hydrogen sulphide from gas mixtures,
· in non-ferrous industry,
· in consumer industry, in production of sole rubbers and artificial leathers, leather production (skin tanning and neutralization), textile industry (finishing of silk and cotton fabrics),
· in medicinal and pharmaceutical industries,
· in food industry, as food additive E500, in bread making, in confectionery production, beverage preparation, etc.
